Kong Moon rice noodles originate from the Chinese city of Jiangmen (Kong Moon in Cantonese) and are slightly thicker than normal rice vermicelli, making them very similar to wheat noodles in terms of thickness. The advantage of these noodles is that they are gluten-free and flavour-neutral, allowing you to put your own twist on them. You can use these noodles in wok dishes or in soups. You can also deep-fry them, for a nice crunch in your dish (puffed rice noodles).
